China leads the world in pork consumption, devouring over 53 million metric tons in 2012 alone—more than half the global total. Pork’s popularity stems mainly from its affordability compared to beef, making it a dietary staple nationwide.

To capitalize on this preference and consumer desire for beef’s appearance, some producers have used borax, a chemical compound, to make pork look like beef. While visually convincing, this practice raises serious health concerns, as borax can be toxic when ingested.
